Sun-Dried Tomato, Spinach and Cashew Dip
This is a very simple and delicious dip that can be thrown together in a flash with the Bellini. Serve with naan bread or tortilla chips.
1 cup sun-dried tomatoes
1 cup salted or unsalted cashews
2-3 spinach leaves (minus the stalks)
1 clove garlic
- Insert the chopping blade into the work bowl and add the garlic, cashews and tomatoes to the bowl. Chop on speed 5 for 6 seconds.
- Add the spinach and blend on speed 4 for 6 seconds.
- Scrape down the sides of the bowl & add a splash of olive oil, a splash of white vinegar and ground pepper.
- Pulse for 1 second at a time, keeping an eye on it to make sure it doesn't become too mushy.
